One thing I really used to love before I was diagnosed with Celiacs disease is bagel.
I haven’t find gluten free bagels until I moved to Scotland but there they are easily found in supermarkets, especially in Tesco stores.
So I couldn’t resist to make the perfect breakfast burger from it.
Ingredients:
1Gluten free bagel
1vegan gf burger patty
2 tbs Vegan sour cream
1-2 ts Chives, chopped
1/2 Avocado, sliced
1/2 ts Lemon juice
Herbed vegan butter
1 ts BBQ sauce
Salt, pepper, cayenne to taste
2-3 Baby tomato, sliced
Preparation:
Prepare all the ingredients first so they are close when you assemble the burger.
Start by frying the veggie burger party in a pan according to packaging instructions.
Meanwhile mash the avocado, season with salt, pepper and lemon juice and stir in finely chopped baby tomato.
In another small bowl mix together vegan sour cream with chives, season with salt and pepper and cayenne.
When the burger patty is almost done, toast your gluten free bagels. I like to use a skillet for this and toast my bagels over herbed margarine or vegan butter.
Once done, spread sour cream on one side of the bagel and mashed avo on the other. Place the burger on the bottom part, spread with BBQ sauce, and carefully Place the top on.
If you’d like more greens in it, add some leaves of baby spinach. I prefer to have a fresh salad on the side.
