Best of Both Worlds: the Veggie Fruit Salad I can’t Get Enough Of.

I’ve always been obsessed with salads.

While others on the table devoured all kinds of greasy food, fast food, unhealthy/healthy platters, I was there waiting for my salad bowl to get to the table so I could relish in the green delights.

Although I’m not a professional chef, since I don’t create mind-blowing recipes from scratch that no one else has done before, I do tend to add a few things to my favorite recipes to make it suit my own taste.

And I’m a big fan of veggies and fruits. So why not include both in the same salad bowl?

There are many recipes online for “fruit ‘n’ veggie” salads, but mine includes the ones that make me salivate the most.

Hopefully, you’ll enjoy it too!

Ingredients:

Vegetables: romaine lettuce leaves, common curly kale, cucumbers, basil leaves (optional).

Fruits: apple cubes, orange cubes (without the peel if you don’t like the bitterness), strawberries, and small mango cubes.

Other ingredients: a cup of cooked quinoa (I prefer the red ones), nuts of your choice (I usually use peanuts, but of course, this is to be disregarded by people with allergies), croutons (optional).

Dressing: 2 tbsp of Balsamic vinegar, 1 tsp of salt, 2 tbsp of olive oil, and a sprinkle of oregano.

Recipe:

1. Wash the vegetables and fruits, then dry them (place them on a towel).

2. Use a glass bowl for the dressing where you add Balsamic vinegar, olive oil, salt, and oregano. Stir them well.

3. Place the vegetables in a large salad bowl first, then add the cooked quinoa. Mix them well.

4. Add the apples, oranges, and mango, then mix well. I prefer to add the strawberry and nuts at the end so the strawberries stay fresh (and not mushy) in case they’re pretty ripe.

5. Add croutons.

6. Add the dressing.

7. Enjoy!

I don’t like to specify how many cucumbers, strawberries, and the rest of the ingredients you should use. Each one of us likes one fruit/veggie more than the other.

So, I’ll leave to you to choose how much of each ingredient you want to use (and if you want to use at all). I usually tend to add or remove ingredients according to my mood.
